Homemade Gnocchi

Good morning!

Gnocchi are one of my favorite dish, so a few months ago, we tried to make our own gnocchi and surprise, this is not as much difficult as we thought! So I encourage everybody to give it a try.


- 1kgs potatoes

- 350g flour

- 1 large egg

- 1 large pinch of salt


- Put the potatoes in boiling salted water around 45mns but adapt the time to the size of your potatoes.

- Once cooked, remove the skin and mash the potatoes. The ideal is to work the potato when itis still warm.

- Add the flour.

- Dig a hole at the center and add the egg and mix it together. If you feel the dough is too dry or too moist, adjust with water or flour.

- Cut the dough into pieces and roll each pieces into a rope and cut into pieces. Add flour if the dough stick to your surface.

You can shape them in different ways, with a fork like in the first image above or with your finger like below or in small balls as you can see in the top right corner of the image below. They don't have to be super regular... after all, you want your guests to see that it is homemade ;)
