This recipe is Rens Kroes' (the sister of Doutzen for Victoria's secret fans), you can find it here: Now it is available in english but at the time, the blog was only in dutch, that's why I have rewrite the recipe in my blog. Her book "Power Food" is big success and I wanted to try this healthy version of lasagna.


- 4 eggplants

- +/- 500ml tomato sauce

- Oregano

- Parmesan

- Fresh basil leaves

- 2 eggs


- Cut theeggplantinto slices, brush with olive oil, add salt and pepper and bake15 minat 240 °.

-Ina loaf pan, place a layerof eggplant, a few tablespoonsof tomato sauce,sprinkle with oregano, parmesanandplace a fewbasil leaves.Repeat theprocess untilthe loaf pan is filled.

- Beat the 2 eggs and pour it into the pan.

- In the oven for 30 minutes at 180°.

This recipe is simple, we don't need much ingredients and super healty! You can serve big slices with parmesan sprinkled on top.
