Eggplant caviar


This recipe is very simple, we love it because it is the only way we can eat eggplants basically...


- Eggplants

- Olive oil

- Provence herbs

- Espelette pepper

– Lemon

– Fresh parsley


- Cut the eggplants in half. Criss-cross with your knife. Season: salt, herbs, Espelette pepper and olive oil.

- Roll the eggplants in foil and cook for 1 hour and a half at 300°F.

-Take out the eggplant pulp with a spoon and chop with a knife. Season again: Lemon and olive oil.

- Add the fresh parsley at the end.
