It's been a while since I haven't made this dessert but we still love it! Our recipe is easy, you can bake it in advance and leave it overnight in your fridge and you can also decline the recipe. Today I made the traditional coffee tiramisu but you can keep the basic recipe and switch the biscuits (speculos for example) or keep the sponge fingers but dive them in red fruits coulis and add some raspberries... it's up to you!
– 1 cup mascarpone – 1/4 cup sugar – 3 eggs – Sponge fingers – Instant coffee – 2 tbsp rum – Non-sweetened cocoa powder
– Separate the whites and the yolks. – Beat the egg whites until stiff. – Combine the yolks with the sugar and mix until whitened. Add the mascapone. – Add the white eggs in 2 times, stir without breaking the whites. – Add the rum to the cold instant coffee. Dive the sponge fingers in it quickly and proceed with the assemblage. – Set aside in fridge for at least 4 hours.
Before serving only, sprinkle the cocoa powder on top.
