It's been a while since I wanted a simple moist honey-coconut cake and I am pretty happy with this first try! Fresh out of the oven and half of it was down, and the other half survived only a few hours ! Here is the recipe:
- 6oz grated coconut - 1 cup powdered sugar - 4 eggs - 1/2 cup flour - 1tsp baking powder - 1/3 cup + 1 tbsp melted butter - 2 tbsp honey - 1 tbsp rum
- Combine the eggs, sugar (you can use granulated sugar if you don't have icing sugar), the coconut, flour, baking powder and butter. - Put in the oven at 350°F for about 25 minutes. The cake is cooked when your knife comes out clean and the cake is golden! - Heat the honey and the rum and pour on the cake right after it's out of the oven.
We love it with yogurt ice cream, let us know if you will give it a try! I love the combination of coconut and honey in this cake and it is so moist!
