Everytime we grill meat, we have French fries. It's a classic at our house. We tried so many versions, different size of slicing, different frying techniques and different seasonings. And here is our favorite:
Potatoes (like Bintje for example)
1. Slice the potatoes and place them on absorbent paper to dry them.
2. Preheat the beef fat at 300°F and dive the fries until they are cooked but not golden.
3. Sit aside for 10 minutes and re-dive them in the beef fat at 350°F until golden.
4. Put some absorbent paper in a large bowl and put the fries in it to remove the extra grease. Then take off the paper and add the seasoning (smoked paprika, garlic powder and thyme).
